Sugar Free Blueberry Coulis (Jam)

- 3 cups blueberries (fresh or frozen)
- 1 cup water
- 1/3 cup Sensato Erythritol, powder
- 2 Tablespoons Dixie Carb Counters Thick It Up Low Carb Thickener
- 1 cup Splenda or Just Like Sugar Table Top
Add all ingredients to sauce pan. Stir and simmer to thicken until reduced by half. Yeilds 2 cups of low carb blueberry coulis (jam). The jam prepared as directed will have the consistency of most store-bought jams. For a thinner jam, reduce the amount of thickener to 1 tablespoon. The blueberries can be mashed prior to cooking to speed the cooking or they can be mashed with stirring utensil during cooking.
Approximately 1.5 carbs per Tablespoon.
