    * Really tasty, easy to make. My 3 and 6 year old love it when I make them pudding cups in mini waffle cone bowls. :)

    * The box suggested 10 ounces of almond milk for low-carb. I used 8 ounces and 2 ounces of heavy cream to thicken it up. It was great. My only complaint is I wish the carbs were just a little bit lower. It's still pretty high if you're trying to stick under 20 net carbs. Still the best I have found though, taste-wise.

    * I've been looking for a good low-carb aspartame-free pudding mix forever. The flavor and texture are excellent. I used 10 oz. almond milk as directed and beat on medium-high speed for 2-3 minutes. The pudding thickened up remarkably well, and thickened up even more when I let it sit in the fridge for 5 minutes. I haven't used this to make pies, but I think it would work well.

    My only qualm is that I think the formula uses a bit too much erythritol. Erythritol has a very easy-to-identify cooling effect in the mouth, and if you eat enough of it in a concentrated amount, it causes a burning effect in the back of the throat. Half of this box of pudding with almond milk is only 70-80 calories, which is great for a snack, but it's enough to cause both the cooling and burning sensations. So my conclusion is this pudding is great in small doses, and maybe mixed with other things, but avoid a whole bowl of the stuff straight-up.
